1/2 cup white vinegar
1/2 cup white sugar
1 cup vegetable oil
2 stalk celery, chopped
1 medium red onion, chopped
1 medium red pepper, chopped
1 medium green pepper, chopped
1 medium yellow pepper, chopped
1 can pinto beans, drained
1 can black-eyed peas, drained
1 can black beans, drained and rinsed
2 cans shoe-peg corn, drained
DIRECTIONS:
In a small saucepan combine vinegar, sugar and oil, bring to a boil. Boil for one minute or until sugar is dissolved. Cool. Chop vegetables. Drain beans, peas and corn. Rinse black beans. Mix together. Marinate of 4 hours or overnight.
Serve with Tortilla chips or Fritos scoops.
